- 1 lb ground turkey
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
Instructions
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add ground turkey, oregano, paprika, salt, and pepper. Cook until browned and fully cooked, about 8–10 minutes.
- In a large bowl, arrange mixed greens, cherry tomatoes, cucumber, red onion, olives, and parsley.
- Top the salad with the cooked ground turkey.
- Whisk together lemon juice and olive oil to make the dressing.
- Drizzle dressing over the salad, then sprinkle with crumbled feta cheese.
- Serve immediately as a light and refreshing meal.
Notes
You can meal prep this bowl by storing the cooked turkey and vegetables separately, then assembling just before eating.
