Description

A fresh and flavorful Greek-inspired salad bowl with seasoned ground turkey, crisp vegetables, tangy feta, and a light lemon dressing.


Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add ground turkey, oregano, paprika, salt, and pepper. Cook until browned and fully cooked, about 8–10 minutes.
  3. In a large bowl, arrange mixed greens, cherry tomatoes, cucumber, red onion, olives, and parsley.
  4. Top the salad with the cooked ground turkey.
  5. Whisk together lemon juice and olive oil to make the dressing.
  6. Drizzle dressing over the salad, then sprinkle with crumbled feta cheese.
  7. Serve immediately as a light and refreshing meal.

Notes

You can meal prep this bowl by storing the cooked turkey and vegetables separately, then assembling just before eating.
