Ingredients

- 1 cup Greek yogurt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup milk
- 1 tbsp honey
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt

- 2 tbsp melted butter (for cooking)
Instructions
- In a large bowl whisk together Greek yogurt, eggs, milk, honey, and vanilla extract.
- In a separate bowl combine flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Heat a skillet over medium heat and lightly grease with butter.
- Pour about 1/4 cup batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking.
