Description

A hearty, cheesy burrito packed with seasoned ground beef, refried beans, and melty cheddar, customizable with fresh toppings.


Ingredients

  • 6 burrito size flour tortillas (we prefer raw tortillas)
  • 1 1/2 cups sharp cheddar cheese, more or less to taste
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 46 garlic cloves, minced
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried oregano
  • 1 16 oz. can refried beans
  • 1/4 cup sour cream
  • 1/2 cup salsa (medium for more of a kick)
  • hot sauce, to taste
  • sour cream, for topping
  • lettuce, shredded
  • Tomatoes, diced
  • Guacamole, optional
  • Rice, cooked

Instructions

  1. Heat a large skillet over medium-high heat and add a drizzle of oil.
  2. Add the chopped onion and minced garlic, sauté until fragrant and translucent.
  3. Add the ground beef, breaking it up with a spoon, and cook until browned.
  4. Stir in chili powder, cumin, smoked paprika, salt, pepper, and oregano; cook for 1 minute.
  5. Mix in the refried beans and salsa, cooking until heated through and well combined.
  6. Remove from heat and fold in half of the shredded cheddar cheese.
  7. Warm the flour tortillas in a dry skillet or microwave until pliable.
  8. Spoon the beef and bean mixture onto each tortilla, then sprinkle with additional cheddar and your chosen customizable toppings.
  9. Fold the sides of the tortilla inward and roll tightly to form a burrito.
  10. Serve immediately with hot sauce drizzled on top and extra sour cream if desired.

Notes

For extra flavor, add a squeeze of lime juice before serving. You can also substitute the cheese with Monterey Jack or pepper jack for a different taste.
