Description

A hearty, cheesy bake combining savory ground beef, shredded cabbage, beans, and sweet corn, topped with melty Mexican blend cheese.


Ingredients

  • 2 tbs olive oil, divided
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 small green cabbage, chopped
  • 1 lb ground beef
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian herb blend
  • pinch red chili flakes
  • 1 cup marinara sauce
  • 14 oz black beans, rinsed drained
  • 1 cup frozen sweet corn
  • 2 cups shredded Mexican blend cheese, divided
  • 2 tbs grated parmesan cheese
  • scallions, chopped

Instructions

  1. Heat 1 tbs olive oil in a large skillet over medium heat. Add onion and red bell pepper; sauté until softened, about 5 minutes.
  2. Add ground beef, breaking it up, and cook until browned, about 6 minutes. Stir in garlic and cook 1 minute more.
  3. Sprinkle in salt, garlic powder, onion powder, paprika, Italian herb blend, and red chili flakes; stir to combine.
  4. Add chopped cabbage and cook, stirring occasionally, until beginning to wilt, about 4 minutes.
  5. Pour in marinara sauce, black beans, and frozen sweet corn; stir to blend. Simmer for 5 minutes.
  6. Transfer the mixture to a greased 9‑inch baking dish. Sprinkle half of the shredded Mexican blend cheese and half of the grated parmesan cheese over the top.
  7. Bake in a preheated oven at 375°F (190°C) for 20‑25 minutes, or until bubbly and golden. Remove, sprinkle the remaining cheese, and bake an additional 5 minutes. Garnish with chopped scallions before serving.

Notes

For extra flavor, add a splash of Worcestershire sauce or a dash of hot sauce.
