A hearty, cheesy bake combining savory ground beef, shredded cabbage, beans, and sweet corn, topped with melty Mexican blend cheese.

- 2 tbs olive oil, divided
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 small green cabbage, chopped
- 1 lb ground beef
- 4 cloves garlic, minced
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp Italian herb blend
- pinch red chili flakes
- 1 cup marinara sauce
- 14 oz black beans, rinsed drained
- 1 cup frozen sweet corn
- 2 cups shredded Mexican blend cheese, divided
- 2 tbs grated parmesan cheese
- scallions, chopped
Instructions
- Heat 1 tbs olive oil in a large skillet over medium heat. Add onion and red bell pepper; sauté until softened, about 5 minutes.
- Add ground beef, breaking it up, and cook until browned, about 6 minutes. Stir in garlic and cook 1 minute more.
- Sprinkle in salt, garlic powder, onion powder, paprika, Italian herb blend, and red chili flakes; stir to combine.
- Add chopped cabbage and cook, stirring occasionally, until beginning to wilt, about 4 minutes.
- Pour in marinara sauce, black beans, and frozen sweet corn; stir to blend. Simmer for 5 minutes.
- Transfer the mixture to a greased 9‑inch baking dish. Sprinkle half of the shredded Mexican blend cheese and half of the grated parmesan cheese over the top.
- Bake in a preheated oven at 375°F (190°C) for 20‑25 minutes, or until bubbly and golden. Remove, sprinkle the remaining cheese, and bake an additional 5 minutes. Garnish with chopped scallions before serving.
Notes
For extra flavor, add a splash of Worcestershire sauce or a dash of hot sauce.
