- 1 pound ground beef
- 1 teaspoon minced garlic
- 1 teaspoon onion powder
- ½ teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 can (8 oz) tomato sauce
- 4 burrito-sized tortillas (10 inch)
- 4 cups shredded Colby Jack cheese
- 1 tablespoon olive oil
- ½ cup diced onion
- ½ cup diced bell pepper
- ¼ cup chopped fresh cilantro
- Optional: lime wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and bell pepper, sauté until softened, about 3 minutes.
- Stir in minced garlic, onion powder, cumin, chili powder, salt, and black pepper; cook 30 seconds.
- Add ground beef, breaking it up with a spoon, and cook until browned, about 5-6 minutes.
- Stir in tomato sauce and simmer for 5 minutes, then remove from heat.
- Lay a tortilla on a flat surface, sprinkle 1 cup shredded Colby Jack cheese over half of the tortilla.
- Spoon ¼ cup of the beef mixture onto the cheese, then fold the tortilla over to create a half-moon.
- Repeat with remaining tortillas and fillings.
- Heat a clean skillet over medium heat and cook each quesadilla for 2-3 minutes per side, until golden brown and cheese is melted.
- Transfer to a cutting board, let rest 1 minute, then cut into wedges.
- Serve with optional lime wedges and extra cilantro if desired.
Notes
For extra crispiness, use a little extra oil when cooking. You can also add black beans or corn for added texture.
