Description

A hearty and cheesy quesadilla filled with seasoned ground beef and melty Colby Jack cheese, perfect for a quick dinner.


Ingredients

  • 1 pound ground beef
  • 1 teaspoon minced garlic
  • 1 teaspoon onion powder
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (8 oz) tomato sauce
  • 4 burrito-sized tortillas (10 inch)
  • 4 cups shredded Colby Jack cheese
  • 1 tablespoon olive oil
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • ¼ cup chopped fresh cilantro
  • Optional: lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper, sauté until softened, about 3 minutes.
  3. Stir in minced garlic, onion powder, cumin, chili powder, salt, and black pepper; cook 30 seconds.
  4. Add ground beef, breaking it up with a spoon, and cook until browned, about 5-6 minutes.
  5. Stir in tomato sauce and simmer for 5 minutes, then remove from heat.
  6. Lay a tortilla on a flat surface, sprinkle 1 cup shredded Colby Jack cheese over half of the tortilla.
  7. Spoon ¼ cup of the beef mixture onto the cheese, then fold the tortilla over to create a half-moon.
  8. Repeat with remaining tortillas and fillings.
  9. Heat a clean skillet over medium heat and cook each quesadilla for 2-3 minutes per side, until golden brown and cheese is melted.
  10. Transfer to a cutting board, let rest 1 minute, then cut into wedges.
  11. Serve with optional lime wedges and extra cilantro if desired.

Notes

For extra crispiness, use a little extra oil when cooking. You can also add black beans or corn for added texture.
