Description

Ingredients

  • 1 pound ground beef
  • 4 ounces salsa, your favorite
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup frozen yellow corn
  • 68 wheat tortillas
  • sour cream
  • shredded lettuce
  • chopped tomatoes
  • black olives
  • avocado
  • guacamole
  • canned black beans, drained

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it up, until fully cooked; drain excess fat.
  2. Stir in the salsa and cook for 2 minutes.
  3. Add the shredded cheese and frozen corn; cook until the cheese melts and the corn is heated through.
  4. Warm the tortillas in the microwave or on a skillet.
  5. Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down on a serving platter.
  6. Top with your choice of garnishes such as sour cream, shredded lettuce, chopped tomatoes, black olives, avocado, guacamole, or black beans.
