Ingredients

- 1 lb ground beef
- 1 tbsp taco seasoning
- 8 taco shells
- 1 cup lettuce shredded
- 1 cup cheddar cheese
- 1 tbsp olive oil
- 1/2 cup diced tomatoes
- 1/4 cup sour cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add ground beef and cook, breaking it up, until browned, about 5 minutes.
- Stir in taco seasoning and 1/4 cup water, cook 1 minute.
- Warm taco shells according to package directions.
- Layer beef mixture onto shells, then top with lettuce, cheddar cheese, diced tomatoes, and sour cream.
- Serve immediately with extra salsa if desired.
Notes
Add a squeeze of lime juice for extra brightness.
