Description

A healthy, low-carb dinner made with tender zucchini halves stuffed with seasoned ground beef, marinara sauce, and melted cheese.


Ingredients

  • 4 medium zucchinis
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the center with a spoon to create boats.
  3. Brush zucchini halves with olive oil and place them in a baking dish.
  4. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  5. Add onion and garlic, cooking until softened.
  6. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  7. Spoon beef mixture evenly into the zucchini boats.
  8. Top with mozzarella and parmesan cheese.
  9. Cover with foil and bake for 20 minutes.
  10. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  11. Garnish with fresh parsley before serving.

Notes

For extra flavor, add red pepper flakes to the beef mixture. You can also use ground turkey or chicken as a lighter option.
