Description
A healthy, low-carb dinner made with tender zucchini halves stuffed with seasoned ground beef, marinara sauce, and melted cheese.
Ingredients

- 4 medium zucchinis
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the center with a spoon to create boats.
- Brush zucchini halves with olive oil and place them in a baking dish.
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add onion and garlic, cooking until softened.
- Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Spoon beef mixture evenly into the zucchini boats.
- Top with mozzarella and parmesan cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add red pepper flakes to the beef mixture. You can also use ground turkey or chicken as a lighter option.
