- 6 Hard Boiled Eggs
- 2 Small Avocados
- 2 tablespoons Sour Cream
- 6 Cherry Tomatoes , finely chopped
- 1 Small Onion , minced
- ½ Lime , juice only
- Fresh Green Chili , sliced
- Cilantro , finely chopped
- Salt and Pepper to Taste
- 1 tablespoon Mayonnaise (optional)
Instructions
- Peel the hard-boiled eggs and cut them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Scoop the avocado flesh into the bowl with the yolks.
- Add sour cream, lime juice, minced onion, chopped cilantro, sliced green chili, and chopped cherry tomatoes.
- Season with salt and pepper, then mash everything together until smooth.
- If using, stir in mayonnaise for extra creaminess.
- Spoon the mixture back into the egg white halves, spreading evenly.
- Garnish with a pinch of paprika or extra cilantro if desired.
- Serve chilled.
Notes
For extra color, sprinkle paprika on top. Prepare up to 2 hours ahead and keep refrigerated.
