- 250g pumpkin purée
- 200g plain flour
- 150g brown sugar
- 100g butter, melted
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- Pinch of salt
- 100g icing sugar
- 2 tbsp orange juice
- Halloween sprinkles or decorations
Instructions
- Preheat oven to 180°C (350°F) and grease a cake tin.
- In a bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In another bowl, whisk together pumpkin purée, brown sugar, melted butter, and eggs until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared cake tin and bake for 35–40 minutes, or until a skewer comes out clean.
- Allow the cake to cool completely.
- Mix icing sugar with orange juice to make a glaze, then drizzle over the cooled cake.
- Decorate with Halloween sprinkles or themed decorations before serving.
Notes
You can add a handful of chopped nuts or chocolate chips to the batter for extra flavor and texture.
