Description

A moist and spiced Halloween pumpkin cake, perfect for autumn celebrations and spooky gatherings.


Ingredients

  • 250g pumpkin purée
  • 200g plain flour
  • 150g brown sugar
  • 100g butter, melted
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • Pinch of salt
  • 100g icing sugar
  • 2 tbsp orange juice
  • Halloween sprinkles or decorations

Instructions

  1. Preheat oven to 180°C (350°F) and grease a cake tin.
  2. In a bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, whisk together pumpkin purée, brown sugar, melted butter, and eggs until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared cake tin and bake for 35–40 minutes, or until a skewer comes out clean.
  6. Allow the cake to cool completely.
  7. Mix icing sugar with orange juice to make a glaze, then drizzle over the cooled cake.
  8. Decorate with Halloween sprinkles or themed decorations before serving.

Notes

You can add a handful of chopped nuts or chocolate chips to the batter for extra flavor and texture.
