Description
A sweet and savory breakfast slider featuring buttery Hawaiian rolls, fluffy scrambled eggs, melted cheddar, crisp bacon, and a hint of sriracha mayo.
Ingredients
Scale
- 1/3 cup mayonnaise
- 1 tablespoon sriracha
- 2 tablespoons salted butter, melted
- 12 large eggs
- ½ teaspoon kosher salt
- 1.5 cups shredded cheddar cheese
- 1 12-pack Kings Hawaiian Rolls
- 1 3.5 oz bag precooked bacon, crumbled (about 1 cup bacon bits)
- 2 tablespoons chopped fresh chives
- 6 slices American cheese
- 2 tablespoons melted salted butter (for cooking)
- 1 teaspoon black pepper
- ½ teaspoon garlic powder
Instructions
- Whisk together mayonnaise, sriracha, and kosher salt in a small bowl; set aside.
- Heat 1 tablespoon melted butter in a large skillet over medium heat and cook the bacon until crisp; transfer to a paper towel-lined plate to drain.
- In the same skillet, add the remaining tablespoon of melted butter and scramble the 12 eggs with black pepper and garlic powder until fluffy; remove from heat.
- Slice the Kings Hawaiian Rolls horizontally and lightly toast the cut sides in a clean pan.
- Assemble each slider by placing a slice of American cheese on the bottom half of a roll, then adding a generous spoonful of scrambled eggs, a few bacon bits, a sprinkle of cheddar cheese, and a drizzle of the sriracha mayo.
- Top with the roll top and repeat for all 12 rolls; garnish with chopped chives before serving.
- Serve warm immediately.
Notes
For extra heat, add more sriracha to the mayo mixture or use pickled jalapeños. The sliders can be assembled ahead of time and reheated briefly before serving.
