- 2 ripe bananas, mashed
- 1/4 cup olive oil
- 1/2 cup maple syrup
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup Greek yogurt
- 2 cups oat flour (gluten-free)
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup dark chocolate chips, divided
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, combine mashed bananas, olive oil, maple syrup, eggs, vanilla extract, and Greek yogurt; mix until smooth.
- Stir in oat flour, cinnamon, baking soda, baking powder, and salt until just combined.
- Fold in half of the dark chocolate chips with a spatula.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy a warm slice of healthy banana bread.
Notes
For extra moisture, you can add 1/4 cup unsweetened applesauce; for a vegan version, replace eggs with flax eggs and use plant-based yogurt.
