Ingredients

  • 1/4 cup olive oil
  • 1/2 cup maple syrup
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup Greek yogurt
  • 2 cups oat flour (gluten-free)
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup dark chocolate chips, divided
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, combine mashed bananas, olive oil, maple syrup, eggs, vanilla extract, and Greek yogurt; mix until smooth.
  3. Stir in oat flour, cinnamon, baking soda, baking powder, and salt until just combined.
  4. Fold in half of the dark chocolate chips with a spatula.
  5. Pour batter into prepared loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Slice and enjoy a warm slice of healthy banana bread.

Notes

For extra moisture, you can add 1/4 cup unsweetened applesauce; for a vegan version, replace eggs with flax eggs and use plant-based yogurt.
