Ingredients

- 4 salmon fillets
- 2 tbsp olive oil
- 1 tsp dill
- 1 tsp parsley
- 1 tsp thyme
- 1 lemon, zest and juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tbsp breadcrumbs (optional for extra crunch)
Instructions
- Preheat oven to 400°F (200°C).
- Pat salmon fillets dry and season with salt and pepper.
- Brush each fillet with olive oil.
- In a small bowl combine dill, parsley, thyme, minced garlic, lemon zest, and breadcrumbs if using.
- Press the herb mixture evenly onto the top of each fillet.
- Place fillets on a baking sheet lined with parchment.
- Bake for 12‑15 minutes, until the crust is golden and salmon flakes easily.
- Finish with a squeeze of fresh lemon juice before serving.
Notes
For extra crispiness, broil for 2 minutes at the end. Serve with steamed vegetables or a light salad.
