Description

A flavorful, oven-baked salmon with a fragrant herb crust, perfect for a healthy dinner.


Ingredients

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 tsp dill
  • 1 tsp parsley
  • 1 tsp thyme
  • 1 lemon, zest and juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp breadcrumbs (optional for extra crunch)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat salmon fillets dry and season with salt and pepper.
  3. Brush each fillet with olive oil.
  4. In a small bowl combine dill, parsley, thyme, minced garlic, lemon zest, and breadcrumbs if using.
  5. Press the herb mixture evenly onto the top of each fillet.
  6. Place fillets on a baking sheet lined with parchment.
  7. Bake for 12‑15 minutes, until the crust is golden and salmon flakes easily.
  8. Finish with a squeeze of fresh lemon juice before serving.

Notes

For extra crispiness, broil for 2 minutes at the end. Serve with steamed vegetables or a light salad.
