- 3 medium ripe bananas, mashed
- 1 cup creamy peanut butter
- 1 teaspoon baking powder
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup chocolate chips
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup almond milk
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5‑inch loaf pan.
- In a large bowl, whisk together the peanut butter, mashed bananas, eggs, and vanilla extract until smooth.
- Stir in the baking powder and salt, then fold in the flour until just combined.
- Add the sugar and mix until incorporated; the batter will be thick.
- Gently fold in the chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra protein, substitute half of the flour with oat flour and add a scoop of whey or plant‑based protein powder.
