Description

A creamy, cheesy pasta dish loaded with rotisserie chicken, broccoli, and extra protein, perfect for a quick high-protein meal.


Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken, shredded (about 4 cups meat)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, diced small
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Cook the penne pasta according to package directions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté the onion until translucent, about 3 minutes.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the shredded rotisserie chicken and cook for 2 minutes to warm through.
  5. Add the broccoli florets and sauté for 4-5 minutes until they begin to soften.
  6. Reduce heat to low and stir in butter, then pour in the heavy cream and chicken broth, mixing well.
  7. Add Italian seasoning, garlic powder, red pepper flakes, salt, and pepper, stirring to combine.
  8. Gradually add the grated Parmesan cheese, stirring until melted and smooth.
  9. Fold in the shredded mozzarella cheese until fully incorporated.
  10. Add the cooked penne pasta to the sauce, tossing to coat evenly.
  11. Cook for an additional 2-3 minutes, allowing the sauce to thicken and adhere to the pasta.
  12. Taste and adjust seasoning if needed, then serve hot, garnished with fresh parsley if desired.

Notes

For extra crunch, add toasted pine nuts or breadcrumbs on top before serving. Leftovers reheat well with a splash of broth.
