Ingredients

  • 1 cup oat flour
  • 1 scoop (30g) vanilla or chocolate protein powder
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk (or any milk of choice)
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/4 cup dark chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oat flour, protein powder, baking soda, and salt.
  3. Add the almond butter, honey, almond milk, and vanilla extract. Stir until a thick dough forms.
  4. Fold in the chocolate chips (if using).
  5. Scoop tablespoon-sized portions of dough onto the baking sheet and flatten slightly with your hand or a fork.
  6. Bake for 10-12 minutes, or until the edges are golden.
  7. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to 5 days or freeze for longer storage.
  • For a nut-free version, use sunflower seed butter instead of almond butter.
