- 1 cup oat flour
- 1 scoop (30g) vanilla or chocolate protein powder
- 1/2 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup almond milk (or any milk of choice)
- 1/2 tsp vanilla extract
- 1/4 tsp baking soda
- 1/4 cup dark chocolate chips (optional)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the oat flour, protein powder, baking soda, and salt.
- Add the almond butter, honey, almond milk, and vanilla extract. Stir until a thick dough forms.
- Fold in the chocolate chips (if using).
- Scoop tablespoon-sized portions of dough onto the baking sheet and flatten slightly with your hand or a fork.
- Bake for 10-12 minutes, or until the edges are golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to 5 days or freeze for longer storage.
- For a nut-free version, use sunflower seed butter instead of almond butter.
- Adjust sweetness by adding more or less honey/maple syrup.
