Description

A moist, buttery Irish tea cake infused with warm spices and a hint of tea, perfect for tea time treats.

Ingredients

Scale
  • 1 cup white sugar
  • ½ cup butter, softened
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk, or more if needed
  • ¼ cup confectioners’ sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, cream together the white sugar and softened butter until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt; gradually add to the butter mixture alternating with milk.
  5. Pour the batter into the prepared pan and bake for 35‑40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool slightly, then dust with confectioners’ sugar before serving.

Notes

For a dairy‑free version, substitute butter with margarine and milk with almond milk. Store leftovers in an airtight container for up to 3 days.
