Ingredients

  • 4 medium zucchini, shredded
  • ½ cup red onion, minced
  • 2 teaspoon salt
  • 2 eggs
  • 2 cloves garlic, minced
  • ½ cup all-purpose flour
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon fresh dill, minced
  • 1 teaspoon baking powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 4 tablespoon oil, for frying, plus more if needed

Instructions

  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out as much liquid as possible.
  2. In a large bowl, combine zucchini, red onion, eggs, garlic, flour, parsley, dill, baking powder, paprika, and black pepper. Mix well.
  3. Heat oil in a skillet over medium heat.
  4. Scoop spoonfuls of the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden brown and crisp.
  5. Drain on paper towels and serve hot with your favorite dip.

Notes

Make sure to remove as much moisture as possible from the zucchini to get crispy fritters.
