- 4 medium zucchini, shredded
- ½ cup red onion, minced
- 2 teaspoon salt
- 2 eggs
- 2 cloves garlic, minced
- ½ cup all-purpose flour
- 1 tablespoon fresh parsley, minced
- 1 tablespoon fresh dill, minced
- 1 teaspoon baking powder
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- 4 tablespoon oil, for frying, plus more if needed
Instructions
- Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out as much liquid as possible.
- In a large bowl, combine zucchini, red onion, eggs, garlic, flour, parsley, dill, baking powder, paprika, and black pepper. Mix well.
- Heat oil in a skillet over medium heat.
- Scoop spoonfuls of the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden brown and crisp.
- Drain on paper towels and serve hot with your favorite dip.
Notes
Make sure to remove as much moisture as possible from the zucchini to get crispy fritters.
