  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon paprika
  • to taste salt

  • 1 cup beef broth or water
  • 1/2 cup milk (optional, adds extra creaminess)
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat and brown the ground beef, breaking it up with a spoon; drain excess fat.
  3. Add the diced onion and minced garlic, sauté until softened, about 2 minutes.
  4. Stir in the dried Italian seasoning and paprika, then sprinkle with salt and pepper.
  5. Layer the sliced potatoes evenly in a greased 9×13 inch baking dish.
  6. Spread the beef mixture over the potatoes, then pour the beef broth or water over the top.
  7. Cover the dish with foil and bake for 35 minutes, or until the potatoes are just tender.
  8. Remove the foil, sprinkle the shredded cheddar and grated parmesan cheese over the top, and return to the oven uncovered for 10-12 minutes, until the cheese is melted and golden.
  9. Optional: stir in the milk for extra creaminess before baking, and garnish with fresh parsley before serving.

Notes

For a lighter version, substitute ground turkey or chicken and use low‑fat cheese; you can also add frozen peas or carrots for extra vegetables.
