Description

A comforting twist on classic lasagna, served as a warm, flavorful soup.


Ingredients

  • 1 lb ground beef
  • 24 oz marinara sauce
  • 4 cups beef broth
  • 8 lasagna noodles
  • 1 cup ricotta cheese
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened, about 3 minutes.
  3. Add ground beef, breaking it up, and cook until browned, about 5-6 minutes.
  4. Stir in oregano, basil, red pepper flakes, salt, and pepper.
  5. Pour in marinara sauce and beef broth, bring to a simmer.
  6. Add broken lasagna noodles, cook for 10 minutes until noodles are tender.
  7. Reduce heat and stir in ricotta cheese until evenly distributed.
  8. Ladle soup into bowls, top with mozzarella and fresh basil.
  9. Serve hot with optional crusty bread.

Notes

For a lighter version, use lean ground turkey and low‑fat ricotta.
