- 1 lb ground beef
- 24 oz marinara sauce
- 4 cups beef broth
- 8 lasagna noodles
- 1 cup ricotta cheese
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened, about 3 minutes.
- Add ground beef, breaking it up, and cook until browned, about 5-6 minutes.
- Stir in oregano, basil, red pepper flakes, salt, and pepper.
- Pour in marinara sauce and beef broth, bring to a simmer.
- Add broken lasagna noodles, cook for 10 minutes until noodles are tender.
- Reduce heat and stir in ricotta cheese until evenly distributed.
- Ladle soup into bowls, top with mozzarella and fresh basil.
- Serve hot with optional crusty bread.
Notes
For a lighter version, use lean ground turkey and low‑fat ricotta.
