Instructions
- Preheat oven to 350°F (175°C) and lightly spray a 9-inch round cake pan with cooking spray.
- In a bowl, whisk together the egg, 0 calorie brown sugar, ½ tsp vanilla extract, 15 g unsweetened applesauce, and 40 g 0% fat Greek yogurt until smooth.
- Add the grated carrot and mix until evenly distributed.
- In a separate bowl, sift together all-purpose flour, baking powder, ground cinnamon, ground ginger, ground nutmeg, and ground cloves; stir in the ½ tsp vanilla extract.
- Combine the dry ingredients with the wet mixture, folding gently until just incorporated.
- Fold in the light cream cheese in small chunks for a creamy swirl.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30‑35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- While cooling, whisk together 30 g 0 calorie icing sugar with a splash of water to make a thin glaze; drizzle over the cooled cake.
- Slice and serve.
Notes
For an even lighter version, substitute the light cream cheese with a low‑fat ricotta. The cake can be stored in an airtight container for up to 3 days.
