Description

These Meatloaf Roll-Ups are a fun twist on the classic comfort dish—seasoned beef rolled with cheese and baked to perfection.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 6 slices of mozzarella or provolone cheese
  • 1/2 cup ketchup (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, Italian seasoning, salt, and pepper.
  3. Mix until fully combined but do not overwork the meat.
  4. On a piece of parchment paper, flatten the meat mixture into a rectangle about 1/2-inch thick.
  5. Lay the cheese slices evenly across the meat.
  6. Carefully roll the meat up jelly-roll style, using the parchment paper to help guide the roll.
  7. Place the roll seam-side down on a lined baking sheet or in a loaf pan.
  8. Spread ketchup on top if using.
  9. Bake for 30–35 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Let rest for 5–10 minutes before slicing and serving.

Notes

Try adding a layer of spinach or cooked mushrooms with the cheese for an extra flavor boost.
