These Meatloaf Roll-Ups are a fun twist on the classic comfort dish—seasoned beef rolled with cheese and baked to perfection.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1/4 cup chopped onion
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 6 slices of mozzarella or provolone cheese
- 1/2 cup ketchup (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, Italian seasoning, salt, and pepper.
- Mix until fully combined but do not overwork the meat.
- On a piece of parchment paper, flatten the meat mixture into a rectangle about 1/2-inch thick.
- Lay the cheese slices evenly across the meat.
- Carefully roll the meat up jelly-roll style, using the parchment paper to help guide the roll.
- Place the roll seam-side down on a lined baking sheet or in a loaf pan.
- Spread ketchup on top if using.
- Bake for 30–35 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 5–10 minutes before slicing and serving.
Notes
Try adding a layer of spinach or cooked mushrooms with the cheese for an extra flavor boost.
