Ingredients

- 4 salmon fillets (about 6 oz each)
- 1 cup cherry tomatoes, halved
- 1/4 cup pitted Kalamata olives, sliced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 lemon, thinly sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Place salmon fillets on a lightly oiled baking sheet.
- Drizzle each fillet with olive oil and season with salt, pepper, and oregano.
- Top each fillet with cherry tomatoes, olives, garlic, and a lemon slice.
- Bake for 12-15 minutes, or until salmon flakes easily with a fork.
- Serve immediately with a side of couscous or crusty bread.
Notes
For extra brightness, garnish with fresh parsley before serving.
