- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- ½ cup finely chopped onion
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup chopped fresh cilantro

Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, cook the ground turkey until browned, breaking it up with a spoon; drain excess fat.
- Add the onion and garlic; sauté until softened, about 3 minutes.
- Stir in chili powder, cumin, salt, and pepper; cook 1 minute until fragrant.
- Mix in the black beans, corn, salsa, and diced tomatoes; simmer 5 minutes.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Sprinkle shredded cheddar cheese over the top.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with lime wedges and sour cream if desired.
Notes
For a lighter version, substitute ground turkey with ground chicken or lean ground beef. Add diced jalapeños for extra heat or swap cheddar for pepper jack cheese. Leftovers store well in an airtight container in the refrigerator for up to 3 days.
