  • 1/2 onion, chopped
  • 2 stalks celery, chopped
  • Salt and freshly ground black pepper to taste
  • 2 cups diced Yukon Gold potatoes
  • 1 can condensed cream of chicken soup
  • 1 can Cheddar cheese soup
  • 4 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups chopped rotisserie chicken
  • 5 strips bacon, cooked and chopped
  • 1/2 cup sour cream
  • 1/2 cup shredded creamy mozzarella cheese
  • Garnish: Shredded Cheddar cheese, crumbled bacon, sliced scallions, crushed Ritzยฎ crackers

Instructions

  1. Melt butter in a large pot over medium heat. Add onion, celery, salt, and pepper. Cook until softened (5 minutes).
  2. Add potatoes and cook for 3 more minutes.
  3. Stir in cream of chicken soup, Cheddar cheese soup, chicken broth, Cajun seasoning, garlic powder, and onion powder. Bring to a simmer.
  4. Cook until potatoes are tender (15 minutes), stirring occasionally.
  5. Add chopped chicken and bacon. Simmer for 5 minutes to heat through.
  6. Remove from heat and stir in sour cream and mozzarella until fully incorporated.
  7. Serve hot topped with Cheddar cheese, extra bacon, scallions, and crushed crackers.

Notes

Storage: Refrigerate in airtight containers for up to 4 days. Add broth when reheating to adjust consistency.
