    • 65 grams coconut sugar (about 1/3 cup)
    • 66 grams almond flour (about 2/3 cup)
    • 1 1/2 teaspoons ground cinnamon
    • 1/4 teaspoon salt
    • 3 Tablespoons vegetable oil

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9×13-inch baking dish and set it aside.
  2. In a large bowl, whisk together the almond flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, maple syrup, vanilla extract, and vegan sour cream.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. In a small bowl, mix together the coconut sugar, almond flour, cinnamon, and salt for the crumble topping.
  7. Add the vegetable oil to the crumble mixture and mix until crumbly.
  8. Sprinkle the crumble topping evenly over the coffee cake batter.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool for 10 minutes before slicing and serving.

Notes
