Ingredients
- For the coffee cake:
- 200 grams almond flour (about 2 cups)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 large eggs
- 2/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup vegan sour cream
- For the crumble:
- 65 grams coconut sugar (about 1/3 cup)
- 66 grams almond flour (about 2/3 cup)
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 3 Tablespoons vegetable oil
Instructions
- Preheat your oven to 350°F (180°C). Grease a 9×13-inch baking dish and set it aside.
- In a large bowl, whisk together the almond flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, maple syrup, vanilla extract, and vegan sour cream.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking dish and smooth the top.
- In a small bowl, mix together the coconut sugar, almond flour, cinnamon, and salt for the crumble topping.
- Add the vegetable oil to the crumble mixture and mix until crumbly.
- Sprinkle the crumble topping evenly over the coffee cake batter.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for 10 minutes before slicing and serving.
Notes
Tips: Make sure to not overmix the batter, as this can result in a dense coffee cake. If you want a crisper crumble topping, bake the coffee cake for an additional 5-10 minutes. Substitutions: You can replace the coconut sugar with brown sugar or granulated sugar.
