Ingredients

  • ½ cup salted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream or plain Greek yogurt
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon fine sea salt
  • 2 cups mashed very ripe bananas
  • ¾ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Mix in the sour cream (or Greek yogurt) until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and fine sea salt.
  6. Add the dry ingredients to the wet mixture and stir just until combined; do not overmix.
  7. Fold in the mashed bananas and chopped walnuts until evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, you can substitute half of the butter with oil, or add a tablespoon of honey for a subtle sweetness.
