Ingredients

- 2 whole heads of garlic
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup crusty bread cubes
- Salt and black pepper to taste
Instructions
- Preheat oven to 200°C (400°F).
- Slice the tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft.
- Squeeze roasted garlic cloves into a pot.
- Add vegetable broth and bring to a gentle simmer.
- Stir in bread cubes and cook until softened, about 5 minutes.
- Season with salt and pepper to taste, then serve warm.
Notes
The roasted garlic creates a naturally smooth, velvety texture without blending. Add fresh parsley or a drizzle of olive oil on top for garnish.
