Ingredients

  • 2 whole heads of garlic
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup crusty bread cubes
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Slice the tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft.
  3. Squeeze roasted garlic cloves into a pot.
  4. Add vegetable broth and bring to a gentle simmer.
  5. Stir in bread cubes and cook until softened, about 5 minutes.
  6. Season with salt and pepper to taste, then serve warm.

Notes

The roasted garlic creates a naturally smooth, velvety texture without blending. Add fresh parsley or a drizzle of olive oil on top for garnish.
