- 1 Large Zucchini
- 2 cups All Purpose Flour
- ½ teaspoon Salt
- 1 teaspoon Baking Powder
- 2 large Eggs
- ¾ cup Sugar
- ½ cup Neutral Oil (vegetable)
- 1 teaspoon Vanilla
- ½ cup Nutella (divided)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Grate the zucchini and squeeze out excess moisture using a clean towel.
- In a large bowl, whisk together flour, salt, and baking powder.
- In another bowl, beat the eggs, sugar, oil, and vanilla until well combined.
- Stir in the grated zucchini.
- Add the dry ingredients to the wet and mix just until combined.
- Pour half of the batter into the loaf pan.
- Drop spoonfuls of half the Nutella over the batter and swirl gently with a knife.
- Repeat with the remaining batter and Nutella on top, swirling again.
- Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, toast a slice before serving and add a pat of butter or more Nutella.
