Ingredients

  • 1 large egg
  • 1 1/4 cups milk
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons baking powder
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • Butter or oil for cooking

Instructions

  1. In a large bowl whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl beat the egg with the milk and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly coat with butter or oil.
  5. Pour 1/4 cup of batter onto the hot surface for each pancake.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes, then flip and cook another 1-2 minutes until golden brown.
  7. Serve warm with your favorite toppings such as maple syrup or fresh fruit.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. You can substitute buttermilk for regular milk for a tangy flavor.
