- 2 cups flour
- 1 tbsp baking powder
- 2 eggs
- 1 3/4 cups milk
- 2 tbsp butter
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- vegetable oil for greasing
Instructions
- In a large bowl whisk together flour, baking powder, sugar, and salt.
- In a separate bowl beat the eggs, then stir in milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until just combined; a few lumps are fine.
- Let the batter rest for 5 minutes.
- Heat a lightly oiled skillet over medium heat.
- Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, about 2 minutes.
- Flip and cook until golden brown on the other side, about 1-2 minutes.
- Serve warm with butter and maple syrup.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking.
