Ingredients

  • 1 cup (250 g) mashed bananas (about 2 medium bananas)
  • 2 large eggs, room temperature
  • ½ cup (100 g) Greek yogurt, room temperature
  • 4 tablespoons (54 g) vegetable oil
  • 1 teaspoon vanilla extract or vanilla paste
  • ½ cup (110 g) brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 ¼ cups (270 g) all-purpose flour
  • ¾ cup (135 g) chocolate chips (optional)
  • ¾ cup (90 g) toasted chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a large mixing bowl combine mashed bananas, eggs, Greek yogurt, vegetable oil, and vanilla; whisk until smooth.
  3. Stir in brown sugar until fully incorporated.
  4. Sift together flour, baking powder, baking soda, and kosher salt; add to the wet mixture and fold gently until just combined.
  5. If using, fold in chocolate chips and toasted walnuts, being careful not to overmix.
  6. Pour batter into prepared loaf pan and smooth the top with a spatula.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, add 1 teaspoon ground cinnamon or nutmeg to the dry ingredients. You can also swap walnuts for pecans or add a handful of dried cranberries.
