- 1 cup (250 g) mashed bananas (about 2 medium bananas)
- 2 large eggs, room temperature
- ½ cup (100 g) Greek yogurt, room temperature
- 4 tablespoons (54 g) vegetable oil
- 1 teaspoon vanilla extract or vanilla paste
- ½ cup (110 g) brown sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 2 ¼ cups (270 g) all-purpose flour
- ¾ cup (135 g) chocolate chips (optional)
- ¾ cup (90 g) toasted chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- In a large mixing bowl combine mashed bananas, eggs, Greek yogurt, vegetable oil, and vanilla; whisk until smooth.
- Stir in brown sugar until fully incorporated.
- Sift together flour, baking powder, baking soda, and kosher salt; add to the wet mixture and fold gently until just combined.
- If using, fold in chocolate chips and toasted walnuts, being careful not to overmix.
- Pour batter into prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra flavor, add 1 teaspoon ground cinnamon or nutmeg to the dry ingredients. You can also swap walnuts for pecans or add a handful of dried cranberries.
