Juicy, crispy roasted chicken thighs seasoned with garlic, paprika, and olive oil.


Ingredients

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lemon, sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken pieces dry with paper towels.
  3. In a large bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and dried thyme.
  4. Toss the chicken pieces in the seasoned oil until evenly coated.
  5. Arrange the chicken on a baking sheet lined with parchment paper, skin side up.
  6. Place lemon slices around the chicken for added flavor.
  7. Roast for 30-35 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes before serving.
  9. Garnish with fresh parsley and serve hot.

Notes

For extra crispiness, broil for 2-3 minutes at the end of cooking.
