- 4 (5 ounce) boneless, skinless chicken filet halves
- ½ cup Hellmann or Best Foods Real Mayonnaise
- ¼ cup grated Parmesan cheese
- 4 teaspoons Italian seasoned dry bread crumbs
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken filets dry and season both sides with salt, pepper, and garlic powder.
- In a shallow bowl combine mayonnaise and lemon juice.
- In another shallow bowl mix grated Parmesan, bread crumbs, and dried Italian seasoning.
- Dredge each chicken piece in the mayonnaise mixture, then press into the Parmesan mixture until fully coated.
- Arrange coated chicken on a parchment-lined baking sheet and drizzle with olive oil.
- Bake for 20‑25 minutes, or until internal temperature reaches 165°F (74°C) and crust is golden brown.
- Garnish with chopped parsley and serve hot.
Notes
For extra crispiness, broil for 2‑3 minutes at the end of baking.
