- 4 salmon fillets
- 1/4 cup pesto
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 2 tablespoons breadcrumbs
- 1 teaspoon lemon zest
- 1 teaspoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix breadcrumbs, lemon zest, dill, salt, and pepper.
- Place the salmon fillets skin-side down and brush each with olive oil.
- Spread pesto evenly over the top of each fillet.
- Press the breadcrumb mixture onto the pesto-covered fillets.
- Sprinkle grated Parmesan cheese over each crust.
- Arrange the fillets on a parchment-lined baking sheet.
- Bake for 12-15 minutes until the crust is golden and the salmon flakes easily.
- Let rest for 2 minutes before serving.
