  3. Stir the dry ingredients into the wet mixture until just combined.
  4. Heat a non‑stick skillet over medium heat and lightly grease with oil.
  5. Pour 1/4 cup batter per pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with maple syrup or butter.

Notes

Let the batter rest for 5 minutes for extra fluffiness; you can add chopped nuts for texture.
