- 1 package refrigerated pie crusts
- 1 cup canned pumpkin puree
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1 egg (for egg wash)
- Lollipop sticks
- Optional: icing or melted chocolate for drizzling
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix together pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract.
- Roll out pie crusts and cut into small circles using a cookie cutter.
- Place a circle on a baking sheet lined with parchment paper, add a spoonful of pumpkin filling in the center, and insert a lollipop stick.
- Cover with another pie crust circle and press edges with a fork to seal.
- Brush tops with beaten egg.
- Bake for 12–15 minutes, or until golden brown.
- Let cool before decorating with icing or melted chocolate, if desired.
