Ingredients

  • 1 package refrigerated pie crusts
  • 1 cup canned pumpkin puree
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1 egg (for egg wash)
  • Lollipop sticks
  • Optional: icing or melted chocolate for drizzling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix together pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract.
  3. Roll out pie crusts and cut into small circles using a cookie cutter.
  4. Place a circle on a baking sheet lined with parchment paper, add a spoonful of pumpkin filling in the center, and insert a lollipop stick.
  5. Cover with another pie crust circle and press edges with a fork to seal.
  6. Brush tops with beaten egg.
  7. Bake for 12–15 minutes, or until golden brown.
  8. Let cool before decorating with icing or melted chocolate, if desired.
