Ingredients

Scale
  • 4 cups chopped rhubarb

  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract

  3. In a separate bowl, whisk together flour, remaining 1/4 cup sugar, and a pinch of salt.
  4. Cut in cold butter until the mixture resembles coarse crumbs.
  5. Transfer the rhubarb mixture to a baking dish and sprinkle the crumb topping evenly over it.
  6. Bake for 35-40 minutes, or until the topping is golden and the filling is bubbling.
  7. Allow to cool slightly before serving.
