- 1 (14.1 oz) package refrigerated pie crusts
- 1 large egg, lightly beaten
- 3 tablespoons turbinado sugar, divided
- 2 tablespoons cold unsalted butter, cubed
- 12 amaretto cookies, crushed
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, toss rhubarb with granulated sugar, ginger juice, and salt. Let sit for 10 minutes.
- Roll out the pie crust onto the prepared baking sheet.
- Sprinkle crushed amaretto cookies evenly over the center, leaving a 2-inch border.
- Arrange the rhubarb mixture on top of the cookie layer and dot with butter.
- Fold the edges of the crust over the filling, pleating as needed.
- Brush the crust with beaten egg and sprinkle with 2 tablespoons turbinado sugar.
- Bake for 35–40 minutes, until the crust is golden and the filling is bubbling.
