  • 1/4 cup granulated sugar
  • 1 tablespoon ginger juice
  • 1/4 teaspoon kosher salt
  • 1 (14.1 oz) package refrigerated pie crusts
  • 1 large egg, lightly beaten
  • 3 tablespoons turbinado sugar, divided
  • 2 tablespoons cold unsalted butter, cubed
  • 12 amaretto cookies, crushed

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss rhubarb with granulated sugar, ginger juice, and salt. Let sit for 10 minutes.
  3. Roll out the pie crust onto the prepared baking sheet.
  4. Sprinkle crushed amaretto cookies evenly over the center, leaving a 2-inch border.
  5. Arrange the rhubarb mixture on top of the cookie layer and dot with butter.
  6. Fold the edges of the crust over the filling, pleating as needed.
  7. Brush the crust with beaten egg and sprinkle with 2 tablespoons turbinado sugar.
  8. Bake for 35–40 minutes, until the crust is golden and the filling is bubbling.
  9. Let cool slightly before slicing and serving.
