- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon fresh ground black pepper
- 2 ounces (56g) feta cheese
- 1 tablespoon chopped fresh dill
Instructions
- Preheat oven to 425°F (220°C).
- Slice zucchini into 1/2-inch thick rounds.
- Toss zucchini with olive oil, garlic, salt, and pepper.
- Spread in a single layer on a baking sheet.
- Roast for 20-25 minutes until golden and tender.
- Remove from oven and sprinkle with crumbled feta and chopped dill.
- Serve warm or at room temperature.
