Description
Deliciously crispy on the outside and tender on the inside, these salmon patties are a quick and easy meal made with pantry staples and fresh herbs.
Ingredients

- 1 cup Panko breadcrumbs
- 1 small onion (or 1/2 large), grated
- 1 garlic clove, finely minced
- 400g / 14 oz cooked fresh salmon or canned red or pink salmon, drained
- 2 shallots / scallions / green onions, finely sliced
- 1/3 cup fresh dill, roughly chopped (or 1 tsp dried herbs of choice)
- 2 eggs
- 1/2 cup parmesan, grated or shredded
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp vegetable oil
- Oil spray
Instructions
- Combine Panko breadcrumbs, grated onion, garlic, salmon, shallots, dill, eggs, parmesan, salt, and pepper in a large bowl.
- Mix until just combined; do not overmix.
- Shape into patties of your preferred size (makes about 6 standard patties).
- Heat vegetable oil in a skillet over medium heat.
- Cook patties for 3-4 minutes per side or until golden and cooked through.
- Drain on paper towels, spray lightly with oil for extra crisp if desired.
- Serve warm with your favorite sauce or salad.
Notes
You can substitute Panko with regular breadcrumbs. Fresh salmon gives the best flavor, but canned works well for convenience.
