Description

Deliciously crispy on the outside and tender on the inside, these salmon patties are a quick and easy meal made with pantry staples and fresh herbs.


Ingredients

  • 1 cup Panko breadcrumbs
  • 1 small onion (or 1/2 large), grated
  • 1 garlic clove, finely minced
  • 400g / 14 oz cooked fresh salmon or canned red or pink salmon, drained
  • 2 shallots / scallions / green onions, finely sliced
  • 1/3 cup fresh dill, roughly chopped (or 1 tsp dried herbs of choice)
  • 2 eggs
  • 1/2 cup parmesan, grated or shredded
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp vegetable oil
  • Oil spray

Instructions

  1. Combine Panko breadcrumbs, grated onion, garlic, salmon, shallots, dill, eggs, parmesan, salt, and pepper in a large bowl.
  2. Mix until just combined; do not overmix.
  3. Shape into patties of your preferred size (makes about 6 standard patties).
  4. Heat vegetable oil in a skillet over medium heat.
  5. Cook patties for 3-4 minutes per side or until golden and cooked through.
  6. Drain on paper towels, spray lightly with oil for extra crisp if desired.
  7. Serve warm with your favorite sauce or salad.

Notes

You can substitute Panko with regular breadcrumbs. Fresh salmon gives the best flavor, but canned works well for convenience.
