  • 1 pound skin‑on salmon fillet
  • 1 medium sweet onion, thinly sliced
  • 1 small red bell pepper, sliced into 1/4-inch rings
  • 1/4 cup olive oil
  • Juice of 1 lime
  • 1/4 cup freshly squeezed orange juice
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • 1/4 teaspoon paprika
  • 1 teaspoon salt
  • Black pepper, to taste
  • 8 corn or flour tortillas, warmed
  • Crumbled queso fresco cheese, for serving
  • 1/2 cup mayonnaise
  • Lime juice, to taste
  • 1 teaspoon sugar
  • Chipotle powder, 1/2 teaspoon
  • Ancho chili powder, 1/2 teaspoon
  • 1 blood orange or cara orange, segmented
  • 1 jalapeño, seeded and chopped
  • 1/3 cup fresh cilantro, chopped
  • 1/2 cup red cabbage, shredded
  • Salt, to taste

Instructions

  1. Pat the salmon dry, season with salt, pepper, and paprika.
  2. Heat 1 tablespoon olive oil in a skillet over medium‑high heat.
  3. Cook the salmon, skin side down, for 4‑5 minutes until crisp, then flip and cook another 3‑4 minutes until opaque.
  4. Remove salmon and let rest 5 minutes before flaking into bite‑size pieces.
  5. In a large bowl combine sliced onion, red pepper rings, garlic, green onions, and red cabbage.
  6. Dress the vegetables with the remaining olive oil, lime juice, orange juice, salt, and pepper; toss and set aside.
  7. In a separate bowl whisk together mayonnaise, lime juice, sugar, chipotle powder, ancho chili powder, and a pinch of salt to create the zesty mayo.
  8. Add chopped cilantro, jalapeño, and orange segments to the mayo, stirring until smooth.
  9. Warm the tortillas in a dry skillet or microwave.
  10. Assemble each taco by placing flaked salmon, dressed vegetables, a drizzle of zesty mayo, and a sprinkle of queso fresco on a tortilla.
  11. Serve immediately and enjoy the festive flavors.

Notes

For extra freshness, add avocado slices or a squeeze of extra lime before serving. This recipe serves 4 and pairs well with a crisp Mexican lager or a chilled margarita.
