Description

A quick and comforting one-pan dinner featuring juicy meatloaf and crispy roasted green beans. Perfect for a weeknight family meal.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup ketchup (plus more for topping)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 12 oz green beans, trimmed
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a bowl, mix ground beef, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper until combined.
  3. Form the meat mixture into a loaf shape and place it on the sheet pan.
  4. Spread a thin layer of ketchup on top of the meatloaf.
  5. In another bowl, toss green beans with olive oil, salt, and pepper.
  6. Arrange green beans around the meatloaf on the sheet pan.
  7. Bake for 25-30 minutes or until the meatloaf is cooked through and the green beans are roasted.
  8. Let meatloaf rest for 5 minutes before slicing and serving.

Notes

Make sure to not overmix the meat mixture to keep the meatloaf tender. Feel free to swap green beans for your favorite veggies.
