Description

  • 2 large boneless, skinless Chicken Filet (1 1/2 to 2 pounds total)
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper
  • 2 to 3 tablespoons olive oil, divided
  • 1 small yellow onion, diced (about 2/3 cup)
  • 3 cloves garlic, minced
  • 1/2 cup drained oil-packed sun-dried tomatoes (2 1/2 ounces), thinly sliced
  • 2 teaspoons dried Italian seasoning
  • 5 ounces baby spinach (about 5 packed cups)
  • 1 ounce Parmesan cheese (1/2 cup firmly packed freshly grated or 1/3 cup store-bought grated)
  • 1 1/4 cups heavy cream
  • 1 tablespoon butter
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon lemon juice

Instructions

  1. Pat chicken dry and season with 1 teaspoon salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat and sear chicken 5-6 minutes per side until golden; remove and set aside.
  3. Reduce heat to medium, add remaining oil and butter, then sauté onion until translucent, about 3 minutes.
  4. Add garlic and cook 30 seconds until fragrant.
  5. Stir in sun-dried tomatoes and Italian seasoning, cooking 1 minute.
  6. Pour in chicken broth and lemon juice, scraping up browned bits, then add heavy cream and bring to a gentle simmer.
  7. Return chicken to the skillet, reduce heat, and simmer 10 minutes until chicken is cooked through.
  8. Add baby spinach and cook until wilted, about 2 minutes.
  9. Sprinkle Parmesan cheese and stir until melted and sauce thickens.
  10. Adjust seasoning with remaining salt and pepper, then serve hot.
