- 3 lb corned beef brisket
- 1 onion, quartered
- 4 carrots, sliced
- 2 cups beef broth
- 1 tsp mustard seeds
- 3 cloves garlic, minced
- 2 bay leaves
- 1 tsp whole peppercorns
- 4 cups water
Instructions
- Place the corned beef brisket in the slow cooker.
- Add the onion, carrots, garlic, mustard seeds, bay leaves, and peppercorns.
- Pour the beef broth and water over the meat.
- Cook on low for 8–10 hours or on high for 4–5 hours until tender.
- Remove the brisket, let it rest for 10 minutes, then slice against the grain.
- Return the slices to the cooker, skim excess fat, and serve with the vegetables.
