Description

A hearty slow cooker beef stew packed with tender beef, carrots, potatoes, and rich beef broth. Perfect comfort food for family meals.


Ingredients

  • 2 lb stew beef
  • 4 carrots sliced
  • 3 potatoes cubed
  • 2 cups beef broth
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat and brown the stew beef on all sides, then transfer to the slow cooker.
  2. Add the chopped onion, sliced carrots, and cubed potatoes to the slow cooker.
  3. Stir in the minced garlic, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves.
  4. Pour in the beef broth and season with salt and pepper.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is tender.
  6. Remove the bay leaves before serving and adjust seasoning if needed.
  7. Serve hot with crusty bread or over rice.

Notes

For best flavor, sear the beef first. Can be frozen for up to 3 months.
