Ingredients

- 2 lb stew beef
- 4 carrots sliced
- 3 potatoes cubed
- 2 cups beef broth
- 1 onion chopped
- 3 cloves garlic minced
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat and brown the stew beef on all sides, then transfer to the slow cooker.
- Add the chopped onion, sliced carrots, and cubed potatoes to the slow cooker.
- Stir in the minced garlic, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves.
- Pour in the beef broth and season with salt and pepper.
- Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is tender.
- Remove the bay leaves before serving and adjust seasoning if needed.
- Serve hot with crusty bread or over rice.
Notes
For best flavor, sear the beef first. Can be frozen for up to 3 months.
