Instructions

  1. Pat the chicken dry and season with salt, pepper, cumin, and smoked paprika.
  2. Heat olive oil in a skillet over medium heat and brown the chicken pieces for 2‑3 minutes per side; transfer to slow cooker.
  3. Add brown rice, corn, chickpeas, black beans, diced tomatoes (with juice), picante sauce, water, and taco seasoning to the slow cooker; stir to combine.
  4. Cover and cook on low for 6‑8 hours or on high for 3‑4 hours, until chicken is tender and rice is cooked.
  5. Shred the chicken directly in the pot using two forks and stir to incorporate.
