Slow-Cooker Kentucky Burgoo

Description

A hearty Southern stew loaded with pork shoulder, spicy sausage, vegetables, and beans, slow-cooked to perfection for a rich and comforting flavor.


Ingredients

  • 2 Tbsp. unsalted butter
  • 2 (4-oz.) spicy pork sausage links, casings removed
  • 1 (2 1/2-lb.) boneless pork shoulder, trimmed and cut into 4 pieces
  • 1 cup chopped yellow onion (from 1 onion)
  • 3/4 cup chopped carrot (from 1 large carrot)
  • 3/4 cup chopped green bell pepper (from 1 small bell pepper)
  • 3 garlic cloves, minced (about 1 Tbsp.)
  • 3 cups chicken stock
  • 12 oz. russet potatoes, cut into 3/4-inch pieces
  • 2 cups chopped green cabbage (from 1 small head)
  • 2 cups frozen corn kernels
  • 1 (15.5-oz.) can cannellini beans, drained and rinsed
  • 3 Tbsp. Worcestershire sauce
  • 1 Tbsp. kosher salt
  • 2 tsp. black pepper

Instructions

  1. In a large skillet, melt butter over medium heat.
  2. Add sausage and cook, breaking it up with a spoon, until browned.
  3. Transfer sausage to the slow cooker.
  4. Season pork shoulder pieces with a little salt and pepper, then sear in the same skillet until browned on all sides. Transfer to slow cooker.
  5. Add onion, carrot, bell pepper, and garlic to the skillet; cook until softened, about 5 minutes.
  6. Transfer vegetables to the slow cooker along with chicken stock, potatoes, cabbage, corn, beans, Worcestershire sauce, salt, and pepper.
  7. Stir to combine, cover, and cook on low for 8-10 hours or high for 4-5 hours, until pork is very tender.
  8. Remove pork shoulder pieces, shred with two forks, and return to the slow cooker. Stir well and serve hot.

Notes

Burgoo is traditionally made with a mix of meats—feel free to add chicken or beef for variety. Serve with cornbread for a classic Kentucky touch.
