Ingredients

  • 1 can black beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese (optional)
  • ¼ cup fresh cilantro, chopped (optional)
  • 8 oz crushed tortilla chips (optional for serving)

Instructions

  1. In a skillet over medium heat, brown the ground beef with the diced onion and bell pepper until fully cooked, draining excess fat.
  2. Transfer the cooked beef and vegetables to a slow cooker.
  3. Add the black beans, corn, diced tomatoes, chicken broth, and the entire packet of taco seasoning to the slow cooker.
  4. Stir to combine, then cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Before serving, sprinkle shredded cheddar cheese and chopped cilantro on top if desired.
  6. Serve the soup hot, optionally topped with crushed tortilla chips for extra crunch.

Notes

For a vegetarian version, substitute the ground beef with 2 cups of cooked lentils or plant‑based crumbles and use vegetable broth.
