Description

These Starbucks-inspired egg white bites are a healthy, protein-packed breakfast that’s easy to make at home!


Ingredients

  • 6 large egg whites
  • 1/2 cup cottage cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon hot sauce (optional)
  • 1/2 cup baby spinach, chopped

Instructions

  1. Preheat oven to 325°F (163°C) and grease a silicone muffin tray.
  2. In a blender, combine egg whites, cottage cheese, Monterey Jack cheese, salt, pepper, garlic powder, onion powder, and hot sauce. Blend until smooth.
  3. Stir in chopped red bell pepper and baby spinach.
  4. Pour the mixture evenly into the muffin cups.
  5. Bake for 25–30 minutes, until the egg bites are set.
  6. Let them cool for a few minutes before removing from the tray.
  7. Enjoy warm or store in the refrigerator for up to 5 days.

Notes

For a sous-vide texture, bake the egg bites in a water bath by placing the muffin tray in a larger pan filled with hot water.
